Ingredients
  

  • 100 g cashews
  • 2 tablespoons dried seaweed (such as nori, wakame, or dulse)
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic (optional, for a stronger flavor)
  • 50 ml water (adjust based on desired texture)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon nutritional yeast (optional, for a cheesy touch)
  • 1 teaspoon tamari or soy sauce
  • 2 tablespoons rolled oats
  • Salt and pepper to taste

For serving:

  • Crackers, bread, or vegetable sticks
  • A sprinkle of sesame or nigella seeds for garnish (optional)

Instructions
 

Prepare the Ingredients:

  • Soak the cashews in boiling water for 20 minutes, then drain them.
  • Rehydrate the dried seaweed by soaking it in cold water for about 10 minutes. Drain and press out the excess water.

Blend the spread:

  • In a blender or food processor, combine the cashews, rehydrated seaweed, lemon juice, garlic (if using), water, olive oil, nutritional yeast (if using), tamari, and rolled oats.
  • Blend until smooth and creamy.
  • If the mixture seems too thick, add a bit more water, one tablespoon at a time, until you reach the desired consistency.
  • If the mixture is too runny, add an extra 1/2 to 1 tablespoon of rolled oats, blend again, and let the mixture rest for a few minutes to thicken.

Serve:

  • Transfer the spread to a bowl.
  • Garnish with sesame or nigella seeds for a finishing touch.
  • Serve with crackers, bread, or vegetable sticks.

Tip:

  • This spread can be made in advance and stored in an airtight container in the refrigerator for up to 3 days. The flavors will intensify over time.
