Preheat your oven to 180°C (350°F) and prepare a baking sheet by covering it with parchment paper.
In a large bowl, mix the flour, flax seeds, sesame seeds, sunflower seeds, chia seeds (or other seeds), salt, and dried herbs.
Add the olive oil and water to the dry ingredients. Mix well until you obtain a homogeneous dough.
On a flat surface, place a sheet of parchment paper and spread the dough on it. Cover with another sheet of parchment paper and roll out with a rolling pin until you get a thin layer.
Carefully remove the top sheet.
Pre-cut the dough into equal pieces using a knife or a pastry wheel, without cutting all the way through. This will make it easier to separate the crackers after baking.
Bake the crackers in the preheated oven for 20-25 minutes, or until they are golden and crispy. Watch them closely to prevent burning.
Allow the crackers to cool completely on the baking sheet. Once cooled, separate them along the scored lines.
Serve the seed crackers with hummus, guacamole, vegan cheese, or your favorite spread.
