Ingredients
  

  • 2 medium sweet potatoes well washed
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of cayenne pepper or adjust according to desired spice level
  • 1/4 teaspoon of fine sea salt
  • 1/4 teaspoon of freshly ground black pepper

Instructions
 

  • Preheat your oven to 200°C (400°F). Place a rack in the center of the oven. Line a baking sheet with parchment paper for easy cleanup.
  • Slice the sweet potatoes into thin rounds, ideally using a mandoline to ensure uniform slices. If you don't have a mandoline, try to cut the slices as thinly and evenly as possible with a sharp knife.
  • Mix the spices and oil. In a large bowl, combine the olive oil, smoked paprika, cayenne pepper, salt, and black pepper. Add the sweet potato slices and gently mix to evenly coat them with the spice mixture.
  • Arrange the slices on the prepared baking sheet in a single layer, making sure they don't overlap. This will ensure they cook evenly and become crispy.
  • Bake in the oven for 15 to 20 minutes, or until the edges of the chips start to curl up and brown slightly. Watch them carefully towards the end of cooking to prevent them from burning.
  • Let the chips cool on the baking sheet for a few minutes; they will become crispier as they cool.
  • Serve immediately, ideally the same day for optimal crispiness. They can be paired with a sauce or dip of your choice for added flavor.
