Spice Preparation: Grind or crush all the spices and set aside.
Dough Preparation:
Preheat your oven to 200°C (392°F) and lightly grease a donut mold.
In a large bowl, mix together the flour, cane sugar, baking powder, and salt.
Incorporate the spice blend into the dry mixture.
In another bowl, combine the apple sauce, vegetable milk, and melted vegan margarine.
Add the wet ingredients to the dry ingredients and mix until you have a homogeneous dough.
Fill the donut molds three-quarters full and bake for approximately 12-15 minutes, or until a tester inserted comes out clean.
Glaze Preparation: Thoroughly wash the lemon under running water before zesting.
Mix the icing sugar and vegetable milk in a bowl until you achieve a smooth consistency.
Incorporate the finely grated lemon zest into the glaze and mix well. Use only the colored outer part of the lemon to avoid bitterness.
Decoration: Once the donuts have cooled, dip them into the glaze.
Immediately place the tiny pieces of candied (or fresh) ginger on the glaze for an aesthetic and tasty touch.
