Seed Crackers

Seed Crackers have their roots in Scandinavian culinary tradition, where crispbreads such as Knäckebröd are a specialty. These flat, crispy breads, often made from rye, have been consumed for centuries in Sweden and other Nordic countries. Initially created for their long shelf life, they have evolved into a staple food appreciated for their simplicity and unique texture. Today, crackers are an integral part of Scandinavian food culture, enjoyed for their versatility and compatibility with various accompaniments.

The history of crackers in Scandinavia is rich and varied. Vikings, for example, carried crispbreads on their long voyages, benefiting from their durability. Over the years, recipes have been refined, incorporating local ingredients and traditional cooking methods.

Seeds are at the heart of this recipe, not only for their texture and flavor but also for their numerous nutritional benefits. Flax seeds, sesame seeds, sunflower seeds, and chia seeds are rich in fiber, protein, and omega-3 fatty acids. They also provide essential vitamins and minerals such as magnesium, zinc, and iron. Incorporating these seeds into your daily diet can help improve digestion, lower cholesterol, and provide a sustainable source of energy.

These Seed Crackers can be easily customized based on your preferences and the seeds available. If you don’t have poppy seeds, you can substitute them with hemp seeds, pumpkin seeds, or nigella seeds. Chia seeds can be replaced with ground flax seeds, and sunflower seeds with pumpkin seeds. This flexibility allows for a variety of flavors and textures while maintaining the nutritional benefits of the seeds.

Ingredients

  • 100 g rye flour or whole wheat flour
  • 50 g flax seeds
  • 50 g sesame seeds
  • 50 g sunflower seeds
  • 50 g chia seeds (or other seeds as a replacement)
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 120 ml water
  • 4 teaspoons dried herbs (thyme, rosemary, oregano, tarragon... according to your preference)

Instructions

  • Preheat your oven to 180°C (350°F) and prepare a baking sheet by covering it with parchment paper.
  • In a large bowl, mix the flour, flax seeds, sesame seeds, sunflower seeds, chia seeds (or other seeds), salt, and dried herbs.
  • Add the olive oil and water to the dry ingredients. Mix well until you obtain a homogeneous dough.
  • On a flat surface, place a sheet of parchment paper and spread the dough on it. Cover with another sheet of parchment paper and roll out with a rolling pin until you get a thin layer.
  • Carefully remove the top sheet.
  • Pre-cut the dough into equal pieces using a knife or a pastry wheel, without cutting all the way through. This will make it easier to separate the crackers after baking.
  • Bake the crackers in the preheated oven for 20-25 minutes, or until they are golden and crispy. Watch them closely to prevent burning.
  • Allow the crackers to cool completely on the baking sheet. Once cooled, separate them along the scored lines.
  • Serve the seed crackers with hummus, guacamole, vegan cheese, or your favorite spread.
