Matcha is a fine and rich powder obtained from green tea leaves; originating from Japan, this bright green powder is not only renowned for its multiple health benefits but is also a central element of the traditional Japanese tea ceremony. With a unique flavor, both sweet and umami, matcha has become a prized ingredient in many recipes around the world.

The term “umami” refers to one of the five basic flavors our palate is capable of detecting, alongside sweet, bitter, sour, and salty. Originating from Japan, “umami” roughly translates to “savory” and is often associated with a rich, full, and slightly salty flavor, found in foods like soy, tomatoes, and mushrooms.

In this recipe, we will incorporate this one-of-a-kind powder to create baked donuts, accompanied by a matcha glaze and decorated with crushed pistachios. A true fusion of indulgence and tradition that will delight your taste buds!

Ingredients
  

For the dough:

  • 180 g all-purpose flour
  • 100 g granulated sugar
  • 10 g baking powder
  • 2 g salt
  • 2 g baking soda
  • 180 ml plant-based milk (such as almond milk, soy milk, etc.)
  • 30 g deodorized coconut oil (melt before use if solid)
  • 5 ml apple cider vinegar
  • 5 ml vanilla extract
  • 2 teaspoons matcha powder

For the matcha glaze:

  • 120 g powdered sugar
  • 30 to 45 ml plant-based milk
  • 2 teaspoons matcha powder

For the decoration:

  • Crushed pistachios 15 to 20 grams
  • Shredded coconut (optional)
  • Chocolate chips (optional)

Instructions
 

  • Preheat your oven to 180°C (350°F) and lightly grease a silicone or metal donut pan.
  • In a large bowl, mix the flour, sugar, baking powder, salt, baking soda, and matcha powder.
  • In another bowl, mix the plant-based milk, melted deodorized coconut oil, apple cider vinegar, and vanilla extract. If the deodorized coconut oil is solid, melt it in a double boiler or microwave until it is liquid before adding it to the liquid ingredients. Ensure not to overheat it as it can become too hot and lose some of its beneficial properties.
  • Pour the liquid ingredients into the dry ingredients and mix until a homogeneous dough is obtained.
  • Fill each donut mold three-quarters full with the batter, either using a piping bag (easiest) or a container with a pouring spout.
  • Bake the donuts in the preheated oven for about 12 to 15 minutes, or until they are golden and a toothpick comes out clean.
  • In the meantime, prepare the matcha glaze by mixing the powdered sugar and matcha powder, then add the plant-based milk little by little, stirring constantly, until a smooth consistency is obtained.
  • When the donuts are baked, allow them to cool slightly, then dip them in the matcha glaze.
  • Decorate the dipped donuts with crushed pistachios and, if desired, with shredded coconut or chocolate chips.
  • Allow the glaze to harden for a few minutes and then, enjoy! These donuts will have a unique matcha tea flavor and a beautiful green color, making them original and delicious.
