Not all desserts are calorie bombs and could even provide you with your daily nutritional requirements, if/when made with the right balance of satisfying and nourishing ingredients. Not so with cupcakes! Quite the opposite actually… That said, we fancied a treat and believe us, these cupcakes are deeelicious… they literally melt in your mouth. We think they’re just blissful.
Cupcakes were extremely popular in the fifties but kind of lost their allure over time. In the 2010’s, they made a come-back thanks to the series Sex and the City.
Our cupcake is a tribute to Caraxes, called the Blood Wyrm, and was ridden first by Prince Aemon Targaryen, during the reign of Jaehaerys I Targaryen, and later by Prince Daemon Targaryen. Caraxes was fierce, slender and blood red.
The biscuit for this Red Dragon is light as air, the frosting is fiery and the taste is an explosion of flavour!
You’ll need: either a mold for cupcakes with paper cases, or reusable aluminium or silicone cupcake cases. The latter are great because they don’t flop over so you can put them straight onto the baking tray in the oven; great when you don’t have a cupcake pan. You’ll also need a piping bag. The Red Dragon (Cupcakes)
Equipment
- an oven
- 2 big bowls
- 1 whip
- 1 piping bag
- 1 cupcake mold
- paper boxes
- silicone molds
Ingredients
- 250 ml coconut milk
- 70 ml canola oil
- 120 g brown sugar
- 40 g cocoa powder
- 120 g flour
- 1 tsp yeast
- 1 tsp white vinegar
- 2 tsp vanilla extract
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 200 g vegetable margarine
- 200 g icing sugar
- food coloring
Instructions
The cupcakes:
- Preheat the oven to 150 degrees.
- Mix all dry ingredients in a big bowl. Start with the flour which you can pass through a sieve to avoid clumping. Do the same with the cocoa powder.
- Then you can add the yeast, salt, bicarbonate of soda and sugar. Mix everything thoroughly.
- Mix the liquid ingredients in a second bowl: coconut milk, canola oil, vanilla and vinegar.
- Gently mix the dry ingredients into the bowl containing the liquids. Whip up everything to get a fluid texture.
- Pour everything into a container with a pouring lip (easier to pour the mix into the cupcake molds).
- Fill the molds up to 3/4 and place in the oven at 150 degrees for about 15 minutes.
- Leave them to cool down before covering them with the icing.
The topping:
- To make the icing, mix veggie butter and icing sugar. Whip for about 5 minutes so that the mix becomes nice and creamy.
- Add the colouring of your choice and mix well with a spatula.
- Pour the mix into a piping bag with a star tip and decorate your cupcakes.
- If you want to decorate them even more, feel free to let your creativity soar: sparkles, sugar pearls, dried coconut flakes…
