The Blue Lotus (Donuts)

As an integral part of the “The Breath of the Dragon” collection, inspired by the grandeur of ancient China, Maison Marmite is proud to present The Blue Lotus. This unique creation celebrates millennial Chinese traditions and art with a modern twist. The Blue Lotus, with its vibrant blue color and exquisite taste, stands out as a culinary experience that is both delicious and original.

The Blue Lotus owes its captivating hue to the use of spirulina, a superfood with multiple virtues. Spirulina is a blue-green algae, rich in proteins, vitamins, and antioxidants. Used for centuries for its nutritional benefits, it now finds its place in modern cuisine as a natural colorant. Its intense blue color allows for the creation of a visually spectacular glaze, while adding a nutritious touch to this sweet delicacy.

The preparation of this donut is really simple and quick: the soft dough is easy to work with, and the spirulina glaze applies with ease, making the decoration as enjoyable as it is playful. In a few simple steps, you can create a donut that is not only a treat for the taste buds but also a feast for the eyes.

The Blue Lotus is a celebration of the beauty and diversity of ancient Chinese culture, and we hope that this creation will inspire and delight all those who have the pleasure of tasting it. Enjoy your meal.

Equipment

  • an oven

Ingredients

For the dough:

  • 180 g of all-purpose flour
  • 100 g of fine sugar
  • 10 g of baking powder
  • 2 g of salt
  • 2 g of baking soda
  • 180 ml of plant-based milk (almond, soy, etc.)
  • 30 g of deodorized coconut oil (melt it before use if solid)
  • 5 ml of apple cider vinegar
  • 5 ml of vanilla extract

For the glazing:

  • 150 g of icing sugar
  • 2 to 3 tablespoons of plant-based milk
  • 1/2 teaspoon of spirulina

Instructions

Dough Preparation:

  • Preheat your oven to 180°C (350°F) and lightly grease a silicone or metal donut mold.
  • In a large bowl, mix the flour, sugar, baking powder, salt, and baking soda.
  • In another bowl, mix the plant-based milk, melted deodorized coconut oil, apple cider vinegar, and vanilla extract. If the coconut oil is solid, melt it in a double boiler or microwave until liquid before adding to the liquid ingredients. Make sure not to overheat it, as it may become too hot and lose some of its beneficial properties.
  • Pour the liquid ingredients into the dry ingredients and mix until you have a smooth dough.
  • Fill each donut mold three-quarters full with the dough, either using a piping bag (easiest) or a container with a pouring spout.
  • Bake the donuts in the preheated oven for about 12 to 15 minutes, or until they are golden brown and a toothpick comes out clean.
  • Let the donuts cool in the mold for 5 minutes, then transfer them to a rack to cool completely.

Glazing:

  • Sift the icing sugar into a bowl to eliminate lumps, resulting in a smooth glaze.
  • Slowly incorporate the plant-based milk, one tablespoon at a time, mixing until you get the desired consistency. The glaze should be thick enough to adhere to the donuts but fluid enough to dip easily.
  • Add the spirulina and mix well to achieve a uniform color. The spirulina will provide a natural color without the use of artificial colorants.
  • Once the donuts have completely cooled, dip the top of each donut in the glaze.
  • Place the glazed donuts back on the rack and optionally, decorate them before the glaze hardens.

Storage Tips:

  • Store the donuts in an airtight container at room temperature to keep them fresh.
  • They are best consumed within 24 hours.
