The Galactic Bean Burger
Ingredients
For 3 burgers:
- 220 g of cooked and drained black beans
- 1 small onion finely chopped
- 2 cloves of garlic minced
- 1 carrot grated
- 50 g of breadcrumbs
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- Salt and black pepper to taste
- Olive oil for cooking
For the homemade barbecue sauce:
- 150 ml of ketchup
- 2 tablespoons of apple cider vinegar
- 2 tablespoons of maple syrup
- 1 tablespoon of soy sauce
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cayenne pepper adjust to taste
- 1 clove of garlic minced
- 1 tablespoon of cornstarch optional
To serve:
- Vegan burger buns
- Lettuce tomato, red onion, avocado slices
- Vegan cheese slices optional
Instructions
Burger preparation:
- In a large bowl, mash the black beans with a fork, or for a more homogeneous texture, use a food processor pulsing in short bursts. Add the onion, garlic, carrot, breadcrumbs, cumin, smoked paprika, salt, and pepper. Mix well until you achieve a uniform paste.
- Form patties with the mixture and let them firm up in the refrigerator for about 30 minutes.
Barbecue sauce preparation:
