One of the main advantages of this recipe is its speed and ease of preparation, requiring only a few essential ingredients. It is therefore ideal for those who have little time to cook or have an almost empty refrigerator, while ensuring an explosion of flavors in the mouth.
Gochugaru, a characteristic Korean chili, is the key ingredient in this recipe. Known for its distinctive aroma and moderate heat, it is easily accessible in Asian grocery stores or online. However, if necessary, you can substitute it with Kashmiri chili or a mix of paprika and cayenne pepper.
To make this dish, start by lightly frying the tofu to create a crispy crust while preserving a tender and moist interior. Then, lightly caramelize the onions and garlic in the same pan, before adding the sauce and the tofu. The recipe requires about 15 minutes of preparation and 15 minutes of cooking.
Dubu-jorim, simple in its composition but complex in flavors, perfectly illustrates how Korean cuisine transforms basic ingredients into memorable dishes. Korean braised tofu (Dubu Jorim)

Ingredients
- 1 pack firm tofu (+/- 450 gr)
- 3 tablespoons cooking oil olive, rapeseed...
- 3 cloves chopped-up garlic
- 3 green onions
- 1 onion
- 1 teaspoon roasted sesame oil (optional)
- 1 teaspoon roasted sesame seeds (optional)
For the sauce
- 125 ml water ½ cup
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon Gochugaru depending on your spice tolerance
Instructions
- Sauce Preparation: In a small bowl, mix water, soy sauce, salt, sugar, and gochugaru to prepare the sauce. Set aside.
- Tofu Preparation: Rinse the tofu block and dry it thoroughly with paper towels to remove as much moisture as possible. Cut the tofu into slices or cubes about 1 cm thick.
- Tofu Cooking: In a large skillet heated over high heat, pour in 3 tablespoons of cooking oil (such as olive oil) and fry the tofu pieces for about 10 minutes. Regularly turn the pieces to ensure each side is well browned. Remove the tofu from the skillet and set aside.
- Aromatics Preparation: Finely chop the garlic, onion, and green onions, reserving some of the green parts of the green onions for the final garnish. Sauté the garlic, onion, and green onions in the same skillet, adding a little more oil if necessary. Cook until they start to caramelize slightly.
- Adding Sauce and Tofu: Pour the prepared sauce into the skillet with the aromatics and stir for 2 to 3 minutes to allow the sauce to reduce slightly. Then add the reserved tofu and gently mix to coat each piece of tofu with the sauce. Continue cooking for a few more minutes until the tofu absorbs some of the sauce.
- Finishing and Serving: To finish, add the toasted sesame oil and toasted sesame seeds (if used), along with the reserved green parts of the green onions for garnish. Serve hot, ideally with a side of white rice or sautéed vegetables.
