The Secret of the Han

Ingredients
Ingredients for the dough:
- 220 g of all-purpose flour
- 50 g of cane sugar
- 1 sachet of baking powder 11g
- 1 pinch of salt
- 2 tablespoons of apple sauce
- 160 ml of vegetable milk almond milk, soy milk...
- 50 g of melted vegan margarine
Spice Blend:
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground ginger
- 1/2 teaspoon of ground cloves
- 1/2 teaspoon of ground star anise
- A pinch of ground white pepper for a slight heat
For the glaze:
- 150 g of icing sugar
- 2 to 3 tablespoons of vegetable milk
- Zest of 1 organic yellow lemon
For the decoration:
- 2 to 3 teaspoons of finely chopped candied ginger optional
- Or
- 2 to 3 teaspoons of finely chopped fresh ginger optional
Instructions
Spice Preparation:
- Grind or crush all the spices and set aside.
- Dough Preparation:
- Preheat your oven to 200°C (392°F) and lightly grease a donut mold.
- In a large bowl, mix together the flour, cane sugar, baking powder, and salt.
- Incorporate the spice blend into the dry mixture.
- In another bowl, combine the apple sauce, vegetable milk, and melted vegan margarine.
- Add the wet ingredients to the dry ingredients and mix until you have a homogeneous dough.
- Fill the donut molds three-quarters full and bake for approximately 12-15 minutes, or until a tester inserted comes out clean.
Glaze Preparation:
- Thoroughly wash the lemon under running water before zesting.
- Mix the icing sugar and vegetable milk in a bowl until you achieve a smooth consistency.
- Incorporate the finely grated lemon zest into the glaze and mix well. Use only the colored outer part of the lemon to avoid bitterness.
Decoration:
- Once the donuts have cooled, dip them into the glaze.
- Immediately place the tiny pieces of candied (or fresh) ginger on the glaze for an aesthetic and tasty touch.
